The highest quality buffalo meat is known as "padwa" in India, taken from a buffalo younger than 24 months. India accounts for about 43% of the world buffalo meat production, with Uttar Pradesh producing the most, followed by Andhra Pradesh and Maharashtra. Called carabeef, water buffalo meat is said to taste similar to domestic beef. However, it is lower in fat, calories, and cholesterol but higher in protein and minerals than beef. Exports of Indian BUFFALO meat has been rapidly growing; the meat is lean, nutritious and has been tested to contain 40% less cholesterol, 55% less calories, 10% more proteins, minerals, and vitamins than beef.

 Indian Buffalo meat has become a cult in many countries including Egypt, Malaysia, Vietnam, Indonesia, KSA & Philippines as it is preferred over all other meats for manufacture of value added, meat based processed products like hamburgers, sausages, and a range of canned meat.
